1corn on the cob, kernels only
280g/10oz self-raising flour
6 free-range egg yolks
50ml/2fl oz milk
6 free-range egg whites
2 tbsp vegetable oil
How to make
1. In a bowl, mix together the flour, corn, egg yolks and milk together and season.
2. In a clean bowl, whisk the egg whites to form soft peaks and when this is done add the whites to the corn mixture and gently fold into the mixture.
3. Heat the oil in a frying pan. Pour tablespoon measures of the corn mixture and fry in rounds for 1-2 minutes on each side. Remove and drain on kitchen towels.
4. Transfer to a plate and serve. Very nice with a sour cream dip
