Corn cakes with a lime dip
Serves 4
For the sauce
4 tbsp white wine vinegar
2 limes, juice only
2 tbsp sugar
4 spring onions, chopped

For the corn cakes
6 tbsp fresh corn from the cob, toasted
4 spring onions, chopped
4 eggs
pinch of salt
4 tbsp milk
8 tbsp icing sugar
a little oil, for cooking

To make the sauce, place all the sauce ingredients into a small saucepan and gently heat until the sugar has dissolved.
Place all the ingredients for the corn cakes into a food processor and blend for a few seconds to create a chunky mixture and then form the mixture into 8 to 10 patties.
Heat a frying pan with a little oil.
Fry the patties on both sides until golden brown. Drain on kitchen paper.
Serve warm with the dip
