Cream cheese and basil bruschetta
4 slice of bread
8 tbsp cream cheese
8 tbsp basil, chopped
salt and freshly ground black pepper, to taste
2 large handfuls of rocket
olive oil, for drizzling
serve with griddles tomatos
1. Heat up a griddle pan on the hob, and when hot, place the bread on it, and griddle for 1-2 minutes each side, or until nicely coloured.
2. In a small bowl, mix the cream cheese and the basil, season to taste, and then spread on to the griddled slice of bread.
3. Place the rocket leaves on top of the cream cheese mix.
4. Drizzle with olive oil.
