1 onion peeled and chopped
2 tbsp olive oil
2 carrots diced
2 small potatos, peeled and diced to bite size
1 small cougette
1 15oz can of chopped tomatos (try the one with garlic and herbs)
2 cloves of garlic, crushed
3/4 pint of vegetable stock
2 oz of small pasta shells
2 tbsp fresh herbs (any you like)
instructions
saute onion in oil for 5 minutes, add all veg and stock and cover for 20-30 minuites, add the pasta and cook for a further 10 mins, after this add the herbs and serve with warm crusty Italian bread and croutons.
