you can use vegan ingredients if you wish
1/2 cup granulated sugar
3 tablespoon cold margarine
1 egg (use Egg Replacer if Vegan)
4oz all purpose flour
1 1/2 teaspoon baking powder
1/3 cup sour cream (use vegan sour cream or vegan plain yogurt)
1/2 cup fresh or frozen blueberries
Preheat oven to 180 degrees
In a food processor, combine sugar, margarine, egg and vanilla; mix until crumbly. Add flour, baking powder and sour cream; mix on and off just until everything is combined. Stir in the blueberries.
Put the batter on baking sheet in 8-10 equal amounts.
Bake in centre of the oven for 12-15 minutes or until scones are golden.
