souffled cheesy potato fries

serves 4

900gm/2 lb potatoes, cut into chunks
150ml/1/4 pint double cream
75gm/2 3/4oz Gruyere cheese, grated
pinch of cayenne pepper
2 egg whites
oil for deep frying
salt and pepper
chopped flat leaf parsley and grated cheese to garnish4

cook the potatoes in a saucepan of boiling salted water for 10 minuites
drain well and pat dry with absorbent paper towels
set aside until required
mix the double cream and Gruyere cheese in a large bowl
stir in the cayenne pepper and season with salt and pepper and peppr to taste
whisk teh eg whites until stiff peaks form
fold into the cheese mixture until fully incorporated
add the cooked potatoes
turning to coat thoroughly in the mixture
heat the oil for dee-frying to 180 degrees
remove the potatoes from the cheese mixture with a slotted spoon and cook in the oil, in batches, for 3-4 minuites or until golden brown
transfer the potatoes to a serving dish and garnish with parsley and grated cheese
