Roasted pepper quiche
serves 8
I cheat with the pastry - I buy already made shortcrust pastry!!
filling
1 red pepper
1 green pepper
1 yellow pepper
2 garlic cloves
2 tbsp olive oil
100gm/3 1/2 oz Mozzarella cheese, grated
100gm/3 1/2 oz cheddar cheese, grated
2 eggs
150ml/5 fl oz milk
1 tbsp chopped basil
salt and pepper
you will need and 8 inch quiche tin
shape the pastry in the quiche tin
cut the peppers in half lengthways and lay hte skin-side uppermist on a baking try
mix the garlic and oil and brush over hte peppers
cook in a preheated oven 200 degrees/gas mark 6 for 20 minuites or until beginning to char slightly
let the peppers cool slightly and thinly slice
arrange in the base of the pasty caase, layering with the mozzarella and cheddar cheese
beat the egga and milk and add the basil
season and pour over the peppers
put the tart on a baking tray and return to the oven for 20 minutes or until set
serve hot or cold
