cheese straws

4oz (100gm) plain flour
3oz (75gm) butter at room temp
2oz (50gm) mature cheddar, grated
1 medium sized egg
finley grated parmesan for sprinkling


lightly grease 2 baking trays
measure the flour into a bowl and rub in butter unitll mixture resembles fine bread crumbs
stir in grated cheddar
keep back a tiny bit of egg yolk for glazing
bring mixture together to form pastry wrap in cling film and chill in fridge for about 30 mins
pre heat oven to 190 degrees
roll the chilled dough out in flouy surface of about 1/4 inch long
place on prepared baking tray
brush wiht egg yolk and sprinkle wiht grated parmesan
bake for 10-15 mins
lift of baking tray and allow to cool on wire rack
