Sweet potato crisps
1 sweet potato, peeled
vegetable oil, for deep-frying
1. Heat a pan a third filled with vegetable oil for deep-frying.
2. Using the thin setting on a mandolin, carefully slice the potato.
3. Add the potato slices to the hot oil and deep-fry for 2-3 minutes, or until the potato is crisp and golden.
4. Remove using a slotted spoon and drain on kitchen paper.
