vegetable oil, for deep-frying
85g/3oz unsalted butter
220ml/7˝fl oz water
110g/4oz plain flour
3 eggs, beaten
55g/2oz stilton, crumbled
Fill a pan to one-third level with oil, for deep-frying.
Put the butter and water into a pan and slowly heat allowing the butter to melt.
Beat in the flour hard using a wooden spoon until thickened and smooth. Remove from the heat and beat in the eggs and stilton until combined.
Using spoons, form the mixture into small ball shapes between the spoons and deep-fry in the hot oil for 1-2 minutes, or until golden.
Carefully remove and drain on kitchen paper and you are ready to serve
