Cucumber and yoghurt dip
Ingredients
1 cucumber, peeled and grated
400g/14oz Greek yoghurt
2 garlic clove, crushed
1 lemon, juice only
2 tbsp fresh mint, chopped
Serves 6

Method
squeeze the grated cucumber in your hands to remove the excess water and then pop in a bowl.
Add the yoghurt, garlic, lemon juice and mint and stir well.


Serving suggestion - serve the dip with raw vegetables or savoury biscuits
