Creamy cheesy mushrooms
160g/6oz mushrooms, sliced
2 cloves, garlic
salt and freshly ground black pepper
large splash of wine
110ml/4fl oz double cream
25g/1oz of cheddar cheese
handful of fresh herbs, chopped
Makes 2 portions
1. Melt the butter in a pan over medium heat.
2. Sauté the mushrooms and garlic for 2-3 minutes until soft.
3. Season with salt and pepper, then add the wine, cream and cheese and continue to cook for 3-4 minutes until the liquid has thickened and finally, stir through the chopped herbs.
serving suggestion - Chargrill some bread on a hot griddle pan for 1-2 minutes. Place a heaped spoonful of the mushrooms on the bread and serve immediately
