Stuffed mushrooms
Ingredients
1 large Portobello mushroom
25g/1oz unsalted butter, chopped
1 tbsp olive oil
1 clove garlic, finely chopped
1 tsp chopped parsley
salt and freshly ground black pepper
25g/1oz breadcrumbs
Serves 1 – I just alter the amount of ingredients by how many people I am serving
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the mushroom on a baking tray. Fill with the butter, oil, garlic and parsley, season with salt and freshly ground black pepper and sprinkle over the breadcrumbs.
4. Place in the oven and bake for 12 minutes.
