Onion sauté potatoes
Ingredients
4 tbsp vegetable oil
8 potatoes, diced
2 spring onion, shredded
salt and freshly ground black pepper
small handful of fresh flatleaf parsley, chopped
Serves 4
1. Heat the oil in a medium non-stick frying pan and sauté the potatoes for 4-5 minutes add the onion and continue to sauté for a further 3-4 minutes, or until the potatoes are golden brown and cooked through.
2. Season to taste and stir through the chopped parsley. Remove from the heat and place on a serving plate and serve at once.
