Pan-fried potatoes, peas and sautéed red pepper and onion
Serves 2
For the pan-fried potatoes
2 potato, peeled, sliced and par-boiled
4 tbsp olive oil
salt and freshly ground black pepper, to taste
pinch of chilli powder, to taste
For the peas and sautéed red pepper and onion
440g/16oz frozen peas
4 tbsp olive oil
2 red pepper, sliced
1 red onion, sliced
Pan-fried potatoes
Toss the par-boiled sliced potatoes in the olive oil, and season to taste with the salt, pepper and chilli powder. Place into a frying pan over a moderate heat to pan-fry for 3-4 minutes on each side, or until golden and crisp.

separately - cook the peas according to packet instructions.
Meanwhile, heat the olive oil in a small frying pan over a medium heat, and sauté the red pepper and onion, for 4-6 minutes, or until the vegetables are tender and then add the peas at the last minute.

serve together with the pan-fried potatoes
