Mushroom Pate
Serves 4
220g/8oz mushrooms, roughly chopped
60g/2oz butter
2 shallots, chopped
2 tbsp tomato purée
6-8 tbsp double cream
2 tbsp parsley, chopped

1. Blend the mushrooms in a food processor.
2. In a pan add the butter, shallots and tomato purée.
3. Fry for one minute, then add the chopped mushrooms and fry for 2-3 minutes.
4. Stir in the cream and chopped parsley and you are ready to serve.

Serve with toast.
