4 tbsp rice
6 tbsp plain flour
2 tbsp each coriander and cumin seeds, crushed
4 large mushrooms, diced
2 tsp baking powder
2 tsp cornflour
2 tbsp sesame seeds
a little cold water, to bind
vegetable oil, for deep-frying
Blend the rice in a food processor or spice grinder and then transfer to a bowl and mix with the flour, spices, mushrooms, baking powder, cornflour, sesame seeds and just enough water to bind together. Shape into two balls.
Heat a large pan of oil until hot and fry each bhaji, one at a time, until golden.
Drain on kitchen paper and serve immediately
