Mozzarella eggy bread sandwich
8 slices of white bread, crusts removed
8 slices of mozzarella
120g/4oz plain flour
8 eggs, beaten
drizzle of oil
Using a cutter, cut each slice of bread into a round to form two circles and sandwich one piece of mozzarella slice between the bread rounds and press together.
Coat the sandwich in flour and then dip in the beaten egg.
Heat the oil in a small non-stick frying pan and fry the eggy bread for 2-3 minutes on each side, or until golden brown.
Remove from the heat and transfer to a serving plate and serve with fresh cherry tomatoes and a crisp green salad
