Hot Mexican sandwich
Serves 2
For the filling
170g/6oz cheese, grated
2 red chilli, chopped
2 garlic clove, chopped
2tbsp parsley, chopped
1 tsp cumin seeds
1 tsp oregano
4 flour tortillas
240ml/8fl oz cream
squeeze of lemon

1. Mix all the filling ingredients in a bowl and then pop the sandwich filling between the two tortillas.
2. Pan fry in a dry pan for 1-2 minutes on each side until golden and the cheese has melted.
3. Stir the lemon juice into the cream.
4. It will thicken and become soured.
5. Slice the Mexican sandwich and serve with the sour cream
