Hot potato and leek salad
2 tbsp olive oil
110-170g/4-6oz new potatoes, sliced
8 baby leeks, washed and sliced
4 garlic cloves, peeled and crushed
salt and freshly ground black pepper
Heat the oil in a large non-stick frying pan or wok and sauté the potatoes for 3-4 minutes, to soften.
Stir in the leeks and garlic and heat for a further 2-3 minutes.
Season to taste and continue to cook until the potatoes are tender.
Transfer the salad to a serving dish and serve at once.
