Broccoli and cashew nut side dish
Serves 4
large head of broccoli, cut into florets
170g/6oz cashew nuts
110g/4oz butter

Blanch the broccoli florets in boiling salted water for 4-5 minutes until tender. While you are waiting for the broccoli to blanch, blend the cashew nuts in a food processor and then pop them in a pan and toast until they are golden brown.
Melt the butter in a pan and add the cashew nuts, then add the broccoli and mix and serve.
