Cheesy Broccoli Casserole
Serves 4-6 people

you will need

1 - 2 stalks of broccoli, broken into little florets
2 cups of grated cheddar cheese (one for the topping and one for actually in the casserole)
3 cups of cooked brown rice
2 cans cream of mushroom soup
1 medium onion, diced
1/2 cup water
salt & pepper to taste
10 mushrooms


Instructions

Preheat oven to 180c/ gas mark 4

In a pan add diced onion and broccoli and simmer over a medium heat until broccoli is just slightly soft. Drain and save 1 cup of water in case it needs to be added to the casserole before cooking.

In a greased casserole dish, add cooked rice, broccoli, onions, mushrooms, 1 cup of cheese and the water along with cream of mushroom soup. Mix well. you may need to add more water if mixture is too thick. Add salt and pepper to taste. Sprinkle grated cheese on top.

Put in oven and bake for about 20-25 minutes, or until knife goes through dish and comes out clean.

Preparation time: 20 mins and cooking time of 20-25 minutes
