makes 4-6
1 courgette - diced
1 onion - diced
1 aubergine - diced
1 tin of chopped toms
198 gm passata
2 pinches mixed herbs
1 bag of quorn mince
8 sheets of lasagne
2 pots of quark
grated cheddar cheese (and use as your healthy extra)

oven on at 200 degrees.
roast the courgette, onion and aubergine with fry light
add the tin toms, passata, quorn and mixed herbs

layer with lasagne and finish with the quark and grated cheese. cook for 30-40 mins until golden brown. The quark topping replaces the cheese sauce and will give it nice crispy topping- you don't have to add the syns then as long as you use your grated cheddar as a healthy option.
