Spicy Bean Patties (from the Somerfield magazine May 2006 issue)

These looked really good - Somerfield claim to make veggie food look sexy!

Serves 4


2 x 14oz cans red kidney beans
3 medium carrots
6 spring onions
2 cloves garlic
2 tsp ground cumin
2 tsp ground coriander
2 tsp fresh coriander
1 oz breadcrumbs
2 tbsp olive oil


put both cans drained red kidney beans into a blender and chop roughly

add the grated carrots, chopped spring onions and crushed garlic. Then add the greound cumin, ground coriander, and fresh coriander and pepper to taste. Blend and mix well

Put in a bowl and mix in the frsh breadcrumbs. Shape into 8 small patties. heat the oil in a frying pan and fry patties for 2 minutes on each side until golden brown

warm 4 mini pitta breads. Slice each in half and fill with a pattie, sprigs of coriander or lettuce leaves (and a spoonful of soured cream if your not vegan!)
