Pesto Potatoes
900gm/2 lb small new potatoes
75gm/2 3/4 oz fresh basil
2 tbsp pine kernels
3 garlic cloves, crushed
100ml/3 1/2fl oz olive oil
75gm/2 3/4 oz freshly grated parmesan chees and pecorino cheese, mixed
salt and pepper
fresh basil sprigs to garnish
cook the potatoes in a saucepan of boiling salted water for 15 minuites or until tender
drain well, transfer to a warm serving dish adn keep warm until required
meanwhile, put the basil pine kernels, garlic and a little salt and pepper to taste in a food processor
blend for 30 seconds, adding hte oil gradually, until smooth
remove the mixture from the food processor and place in a mixing bowl
stir in the grated parmesan and pecorino cheeses
opoon the pesto sauce over the potatoes and mix well
garnish with fresh basil sprigs and serve immediately
