Green Tagliatelle with garlic

2 tbsp olive oil
1 bunch spring onions, sliced
2 garlic cloves, thinly sliced
250gm/8 oz sliced mushrooms
450gm/1 lb fresh green and white tagliatelle
1 tbsp olive oil
225gm/8oz frozen spinach, thawed and drained
115gm/4oz full-fat soft cheese with garlic and herbs
4 tbsp single cream
60gm/2 oz chopped, unsalted piastachio nuts
salt and peper
2tbsp shredded fresh basil to garnish



heat the 2 tbsp oil in a large frying pan
add the spring onions and garlic and fry for 1 minute until just softened
add the mushrooms to the pan, stir well, cover and cook over a low heat for about 5 minutes, until softened
meanwhile, bring a large saucepan of lightly salted water to the boil
add the tagliatelle and olive oil and cook for 3-5 minutes, unitl tender but still firm to the bite
drain the tagliatelle thoroughly and return to the saucepan
add the spinach to the frying pan and heat through for 1-2 minutes
add the cheese to the pan allow to melt slightly
stir in the cream and continue to cook, without allowing the mixture to come to the boil, until warmed through
pour the sauce over the pasta, season to taste with salt and black pepper and mix well
heat through gently, stirring constantly, for 2-3 minutes
transfer the pasta to a serving dish and sprinkle with the pistacho nuts and shredded basil
serve immediately
serve with italian bread
