Garlic and Pine Nut Tarts

serves 4

4 slices wholemeal or granary bread
50gm/1 3/4 oz pine nuts
150gm/5 1/2 oz tbsp butter
5 garlic cloves peeled and halved
2 tbsp fresh oregano, chopped

note - you can use puff pastry - blind bake for 10 minutes before adding mixture

using a rolling pin, flatten the bread slightly. Using a pastry cutter, cut out 4 circles to fit your individual tart tins - they should measure about 4 inches across.
keep back the offcuts of breadand leave them in the fridge for 10 minutes or until you need them again
place the pine nuts on a baking tray and toast untder a preheated grill for 2-3 minutes or until golden in colour
put the bread offcuts, pine nuts, butter, garlic and oregano into a food processor and blend for about 20 seconds - the mixture should have a rough texture
spoon the pine nut butter mixture into the lined tin and bake in a preheated pvem at 200 degrees for 10-15 minutes or until golden
transfer the tarts to serving plates and serve warm
