Cheese and Potato Layer Bake
450gm/1 lb potaties
1 leek, sliced
3 garlic cloves, crushed
50gm/1 3/4 oz cheddar, grated
50gm/1 3/4 oz Mozzarella, grated
25gm/1 oz Parmesan cheese, grated
2 tbsp chopped parsley
150ml/1/4 pint single cream
150ml/1/4 pint milk
salt and pepper
freshly chopped flat leaf parsley, to garnish
cook the potatoes in a saucepan of boiling salted water for 10 minuites.
cut the potatoes into thin slices.
Arrange a layer of potatoes in the base of an overproof dish.
Layer with a little of the leek, garlic, cheeses and parsley
repeatt he layers until all of the ingredients have been used, finishing with a layer of cheese on top
mix the cream and milk together, season with salt and pepper to taste and pour over the potato layers
cook in a preheated oven 160 degrees/gas mark 3 for 1-1/4hours or until the cheese is golden brown adn bubbling and the potatoes are cooked through
garnish wiht freshly chopped flat leaf parsley and serve immediately
