Cheese and Garlic mushroom Pizzas

serves 4

I always cheat and buy the bases for the pizza - I really don\'t have time to come home and make the bases first

4 pizza bases
topping - 25gm/1oz butter
350gm/12 oz mixed mushrooms, sliced
2 garlic cloves, crushed
2 tbsp chopped parsley
2 tbsp tomato puree
6 tbsp passata
75gm/2 3/4 oz Mozzarella cheese, grated
salt and pepper
chpped parsley, to garnish

preheated oven at 190 degrees

melt the butter in a frying pan and saute the mushrooms, garlic and parsley for 5 minuites
mix the tomato puree and passata and spoon on to the pizza base, leaving 1cm around the edge of the dough
spoon the mushroom mizture on top
season well and sprinkle the cheese on top.
cook the pizza in a preheated oven for 20-25mins
garnish with chpped parsley and serve
