Chimichurri Salsa
Chimichurri is green sauce that's an absolute must in Argentine cuisine. Many different ingredients can be used according to personal tastes and what is available at the time, but olive oil, vinegar, garlic and herbs are considered essential ingredients when making authentic chimichurri. Argentines use this sauce as a marinade as well as a condiment, which they spoon generously over many of their dishes.
INGREDIENTS:
We've included a number of ingredients that are optional. They're here for you to experiment with, as this is such a versatile sauce.
120ml - Extra Virgin Olive Oil
120ml - Red Wine Vinegar or
(90ml - Lemon Juice)
90ml - Water
1 (or 2) - Garlic Cloves
1 tsp - Salt
(Any of the following herb can be used)
3 tbsp - Freshly Chopped Parsley
3 tbsp - Freshly Chopped Oregano
1 tbsp - Freshly Chopped Thyme
1 tsp - Freshly Chopped Basil
(Any of the following spices can also be used)
½ tsp - Chili Pepper Flakes
½ tsp - Ground Cumin
½ tsp - Ground Paprika
(Finally; any of these ingredients may also be included)
2 - Shallots
1 - Tomato (Peeled and seeded)
1 - Capsicum
1 - Spring Onion
Place all of the ingredients in a blender, except the olive oil and half of the water, and blend lightly. Add the olive oil and enough of the water to blend it to a smooth paste.
Cover and leave to stand for at least 2 hours at room temperature before serving.
