Chocolate sponge pudding
110g/4oz unsalted butter, softened
110g/4oz caster sugar
110g/4oz self-raising flour
2 tbsp cocoa powder
For the chocolate sauce
4 tbsp double cream
4 tbsp soft brown sugar
4 tbsp unsalted butter
2 tbsp cocoa
Cream the butter and sugar together in a food processor and then add the flour and cocoa powder and pulse to combine. Add the egg and pulse again.
Grease a small oven-proof glass bowl with butter and pour the sponge mixture in.
Microwave for 4-5 minutes on high or until cooked and springy to the touch.
Heat the cream, sugar, butter and cocoa together in a pan, stirring occasionally. Simmer gently for a few minutes.
Turn the pudding out onto a serving plate and pour the chocolate sauce over to serve
