Apple steamed pudding
200g/8oz caster sugar
200g/8oz unsalted butter
200g/8oz self-raising flour
110ml/4fl oz milk
pinch of ground ginger
60g/2oz unsalted butter
6 tbsp honey
double cream, to drizzle
Put the eggs, sugar, butter, flour, milk and ginger into a food processor and blend together until the mixture resembles a smooth thick batter.
sauté the apple for 2-3 minutes to soften in butter on a gentle heat.
Grease a bowl with butter and put the sautéed apples in it and then drizzle with the honey.
Pour the batter mixture into the bowl and cover with cling film.
Microwave on high for four minutes, or until well risen and golden.
Turn out the pudding onto a serving plate. Drizzle with the cream.
