fruit and brandy crumble
Serves 4
For the crumble:
170g/6oz butter
170g/6oz plain flour
220g/8oz oats
220g/8oz brown sugar
110g/4oz hazelnuts, chopped
For the filling:
60g/2oz butter
1tsp cinnamon
2 oranges, zest only
2 vanilla pods, seeds only
2 miniature bottles of brandy
280g/10oz apricots and prunes
2 apples, cored and cut into chunks
170g/6oz brown sugar
handful of oats
double cream to serve

Preheat the oven to 200C
Make the crumble, put the butter and sugar into a food processor and blend.
Add all the other crumble ingredients and blend until the mixture resembles breadcrumbs
Melt the butter in a pan and then add the sugar and dissolve.
Add the other filling ingredients and stir through and simmer gently for 2-4 minutes until the fruit is beginning to soften. Put fruit in oven dish and top with the crumble top
cook for 20-30 minutes and serve hot with cream or ice cream
