cheats chocolate cake with orange custard
For the cake
2 slice chocolate cake
170ml/6fl oz double cream
1 miniature bottle of Baileys
10 orange segments
For the orange custard
300ml/10fl oz double cream
4 egg yolks
4 tbsp caster sugar
6 orange segments, diced
Cut the cake into a round and use to line an 8cm/3in chef's ring placed on a serving plate.
Put the cream and Baileys into a medium bowl and whisk together until thick.
Spoon the cream mixture on top of the cake and smooth off the top, remove the ring and arrange the orange segments on top.
heat the cream in a medium pan for a few minutes. In the meantime, beat the egg yolks in a bowl with the sugar, then pour the hot cream onto the egg yolks, stirring constantly. Mix well then return to the pan and stir over a low heat until the mixture thickens. When it has thickened stir in the diced orange segments.
to serve, drizzle the custard over the cake and serve.
