caramelised pineapple muffins
Serves 4 – I always double the ingredients, as my lot are greedy!!
1 tin of pineapple slices
2 tbsp caster sugar
8-12 tbsp self-raising flour
300ml/ ˝ pint milk, or enough to make a batter
Grease a muffin tray with butter
Preheat the oven to 190C/Gas mark 5.
Make a dry caramel by heating the sugar in a sauté pan until it has dissolved and begins to colour.
Add the pineapple slices and cook for 1-2 minutes. Allow to cool and then spoon into the muffin tray.
In a large mixing bowl, combine the eggs, sugar and self-raising flour and then stir in enough milk to make a smooth batter.
Pour the batter into the muffin tray over the caramelised pineapple.
Bake for 10-12 minutes until golden and cooked through
