Cappuccino pudding
Serves 4
For the chocolate mousse
110g/4oz chocolate
240ml/8fl oz double cream, lightly whipped
16-20 sponge biscuits
240ml/8fl oz double cream, lightly whipped
grated chocolate to garnish
For the coffee sauce
6 tbsp instant coffee
240ml/8fl oz double cream

Break up the chocolate and put into a heatproof dish over a pan of simmering water make sure that the bowl is not touching the water and gently melt.
Fold the cream into the chocolate in the bowl.
Take 4 chefs' rings with a diameter of 8cm/3in and cut the biscuits to length and line the ring so that they sit about 2cm/1in above the top of it and fill the ring with the chocolate mousse.
Place the lightly whipped cream onto the chocolate mousse.
Sprinkle with grated chocolate.
For the coffee sauce - heat the double cream and coffee and drizzle round the edge of the pudding and serve
