Orange rice pudding
Serves 4
Ingredients
400g/14oz rice
400ml/14fl oz coconut milk
2 vanilla pods, split
2 orange, juice and zest only
150ml/6fl oz double cream
400ml/14fl oz milk
4 tbsp caster sugar
To serve
icing sugar to dust
Method
Put all the ingredients in a pot and gently bring to a simmer.
Simmer for 10-12 minutes or until the rice is tender.
Put into a serving dish, dust with icing sugar and serve – it’s as simple as that!!
